"I got more than just my breakfast at the drive thru window"

sharing the real spirit of Christmas


One day this week I was having what you might call a hectic and challenging day and I had not even had my second cup of coffee yet!  Ugh!  I zoomed through a  local drive thru fast food chain and ordered a tall coffee and my favorite breakfast item.  I was having a hard time locating enough change to pay the cashier, could not locate my debit card and was getting a bit frustrated with the way the day was shaping up.  

The cashier was patient as I apologized as I was rambling through my purse and praying that I had not lost my debit card and where in the world was that change I knew I had in my side pocket?  Finally, I recovered the change, handed her the money and she stopped and looked at me and smiled.  I smiled back and said thank you.  I was just about to proceed to the next window to pick up my order and she said to me  . . .

"are you ready for Christmas?"   
me:  "My goodness NO!  I have so much to get done,
 but it will happen"
cashier:  "But are you ready for the true meaning of Christmas"  (with a smile again)
me:  "Yes, I am ready for that!  We do celebrate CHRISTmas indeed!"
cashier:  "That is what is important,  I sure hope that God blesses you and your family and you have a wonderful Christmas"
me:  "Thank you.  You just made my day better."

That cashier did something few people are brave enough to do with a stranger . . . wish them MERRY CHRISTMAS, recognize the true meaning of the season, ask if you knew what the TRUE meaning of Christmas is and then proclaimed a prayer - May GOD bless you and your family at Christmas.

He keeps sending me angels!  There are angels all around us!  Those quick exchange of words made my entire day turn around!  Yes, I have so much to do for preparation of Christmas, and yes at that time I was facing some challenges in my day.  But that cashier found a way to not only proclaim her faith, make sure I had the same faith and asked for a blessing for us.  I wonder if she really knew how much of a blessing her words were to me?  Somehow I think she did and I certainly must have looked like I needed to hear it too! There was not enough time to continue to chat as the line was long behind me.  I just looked at her and said "THANK YOU" again and drove up to the next window to pick up my meal. 

In the busy rush of Christmas we need to remember that a simple little thing can help you catch the Christmas spirit!  When you bring out that Christmas china, or just plastic dinner ware of red, when you hang the heirloom stockings or just some you picked up at the local dollar tree, when you cook that divine meal, or just decide to have pizza, when you look all over for the hottest trend for a gift, or give a simple Christmas card instead . . . 

No matter your income, status, or what type of tree you have or not. . . we all have our own unique way of spreading Christmas cheer.  Find your unique way and embrace it . . . share it . . . just like the sweet cashier that delivered more than breakfast to me at the drive thru!  I must say that was the best breakfast I have had in a long time . . . and it did not cost her a thing to give me that gift!

Prayer:   Thank you God for your words breathed into your children and the courage they have to be bold and share them with others.  May we all proclaim your birth and your coming during this season of Christmas.  May we be quiet and slow down long enough to experience the true meaning of what your birth really means to us.    We ask that you give us peace, comfort and joy during this time and that we find time to offer you the praise and adoration you so richly deserve.  In the name of Jesus we ask these things.  Amen

Movie nights will be held every Friday and Saturday. Movie nights are presented by Great Wolf Lodge. Movies scheduled to be played at 7 p.m. each night are as follows:

The Four Candles Of Light Story

Four Candles slowly burn
The Glow  was so soft one could almost hear them talking
the first candle said “ I am PEACE, the world is full of anger
and fighting, nobody can keep me lit “, Then the flame of peace
went out completely.

Then the second candle said “I am FAITH, I am no longer
indispensable , it does not make sense that I stay lit another
moment “ just then a soft breeze blew out FAITH’s flame.

Sadly the third candle begin to speak  “I am LOVE, people
do not understand my importance, so they just simply put
me aside , they even forget  to love those who are nearest to
them , I have not the strength to stay lit “ and waiting
no longer, LOVE’S flame went out.

Suddenly a child entered the room and saw the 3 unlit candles;
he shouted out ,“ Why aren’t you burning ? You are supposed to
stay lit to the end !”  Saying this the child began to cry.

Then the Fourth candle answered out, “ Don’t be afraid, I am
HOPE, while I am still burning we can relight  the other candles”.
With shining eyes , the child took the candle of HOPE and
relit the other candles.

The flame of HOPE should never go out from your life and with
HOPE each of us can live a life with PEACE, FAITH and LOVE

Like countless others, Isaac George Kannon had a dream: to immigrate to America, to work hard, and to provide his family with a healthy and prosperous life.

He stepped ashore in 1905. First he peddled quality goods from a pack on his back-on foot. Then he moved up to the luxury of a horse-and-buggy. Finally, in 1916, Isaac opened a retail store in Wendell, NC. That establishment, now expanded to 4,200 square feet across four storefronts, still flourishes today. EASY LAYER PUNCH BOWL CAKE 

You get the invite to the annual office Christmas party, church dinner, or Christmas Reunion with the family.   Of course the next invite is  “Can you bring a dish?”    So of course these events fall right into the busiest time of year and you are stretched for every minute of time.  Well I have an easy dessert that you can whip up the night before, let it sit and marinade in the fridge and top it off with cool whip before you head out the door.  It is easy!  I discovered it one Christmas myself when I made a sour cream pound cake that sort of pounded to pieces when I went to turn it out of the Bundt cake pan.   It tasted incredible but fell all apart!  So with a little creativity I was able to salvage the cake and in the process created a dessert that is now a tradition each year around the holidays.  Although, now my cakes will not fall apart and I find myself having to cut them up!  Figures huh?  But the end result is the same – delicious!   Give it a try!

You will need one cooked Duncan Hines butter recipe cake mix.  Cook according to directions.  Or if you really want to make it simple – purchase a round Bundt cake pan size pound cake from the bakery at the grocery store – try it with sour cream pound cake – it is divine!

Then you need . . . to make Cook and Serve Vanilla Jell-O Pudding according to package directions.
  I use carnation canned milk because it makes it even richer!  Once it is thicken, remove it from the burner and sit it to the side.

Cut up the cake and begin to layer it in a punch bowl or shallow glass bowl. 

Then spoon over the mandarin oranges.
Then spoon over the pudding.

Then repeat ending with the cake.  Then pour the juice from the mandarin oranges all over the layered dessert.
This is what it will look like as you layer cake first, oranges, then pudding, then repeat until you end with cake.

Stick in the fridge and cover it well with saran wrap.  Let it sit overnight to marinade or if you need it right now go ahead and spread the cool whip over the dessert.
  Both way it is delicious, and the longer it sits the more the cake soaks up all the juice and pudding.
Variations:  I have also used fruit cocktail, pineapple, and cooked canned apples.  But the oranges are our favorite!  Enjoy!

Down a Carolina Road
It is Sunday and we go to church!
It’s time to HANG THE GREENS!


I admit that this year I have been slow to get inspired to decorate for the Christmas season.  I just could not get the inspiration to go in the attic and hunt to find the items I want to use and separate them from the ones that have seen better days.   Just needed some inspiration.  Well as always, God knew what we all needed.

Today at our church and at many churches across North Carolina, hanging of the greens was celebrated.  Our church went through a lot of preparation to make the event a sermon.  With each item that was placed in the sanctuary we heard an old world story about why we do this in the Christian faith.  Then we sang a Christmas carol.  Then we heard another description of why we hang stockings, why we have lights on the tree, why we use evergreens, even the old story of a Bishop that began the tradition of walking up on roof tops and dropping coins down the chimney to the less fortunate. 

As much as many corporations focus on the commercialization of this season. . . we are reminded again and again that we celebrate CHRISTmas because of the birth of Christ.  We are reminded that all the traditions that go with Christmas all have roots and ties to the Christian faith.

Well, today’s service worked.  I was inspired.  Now our home looks like a mess of boxes and decorations, and ribbons and lights!  But we are getting it done . . . because it is part of our Christian faith to celebrate the birth of our King.

 Yes . . . it is truly this beautiful . . . like a tropical island in our very own North Carolina!

Venture to Bear Island and reward yourself with vivid memories of one of the most unspoiled beaches on the Atlantic coast. Accessible only by passenger ferry or private boat, there's just one thing missing at Hammocks Beach that's is the crowd!  Serenity – calm waves, you can walk out forever and only be knee deep.  Bathrooms on site.  You take a ferry ride over which is worth the visit in itself.  The ride over you have a guide that tells you about the wildlife and nature all around you.  Then you arrive and have to take a little bit of a hike, so travel light.  But when you get there it is worth it!  This beach has the softest silkiest sand!
 Feels like baby powder in your hands!


Stroll the beach with laughing gulls and sandpipers. Cast a baited hook into endless rows of foaming breakers. Discover tiny specimens of marine life in tidal pools and mudflats. Use a camera or paintbrush to capture the green and gold grasses that color the salt marshes. Spend the night among the sand dunes, or simply bask in the sun and do nothing at all.  Many folks camp here for weekends and enjoy a nature excursion!

Secluded and tranquil, free from intruding commercialism, Hammocks Beach may not be for everyone, but the island is a retreat for people who welcome the challenges of relentless sun, sand, sea and sky.

Down a Carolina Road . . . 

We go to Wrightsville Beach, NC! 
Incredible living room !

I can give this one my personal endorsement - because our family  enjoyed a weekend at this wonderful home.  The beach is just down the culdesac with a wonderful walk way to the widest beach I have ever seen in North Carolina - absolutely beautiful!  Plus you are just minutes to the city of Wilmington and so much fun and excitement awaits you there!  Be sure and visit the Blue Water Grill just over the bridge about 3 miles from this house.  This home is located in a very quiet residential area. . . away from all the busy college student atmosphere, but close enough to it that the younger college age in your crowd can walk down to the action!  With 5 bedrooms and two dens, a large 2 car garage and decks galore, you will have plenty of room to spread out and enjoy!  Master has a deck view of the ocean!  The kitchen is stocked with everything you need to cook and the large dining room table is wonderful!

Beautifully decorated inside and out, once you enter Trim Investment's tiled foyer you know you are about to experience a vacation home unlike all the rest. The open floor plan found in the main living area offers more than enough space for everyone to gather and share good times together. With a large and open kitchen the entire family can get together as meals or snacks are being prepared. This home boasts a breakfast nook, seating at the kitchen island and a formal dining area with more than enough room for everyone. With high ceilings and an abundance of natural light you will enjoy relaxing in the living room as you sink into one of the 2 soft leather couches or love seat. Also on this level are 2 bedrooms with a Jack 'n Jill bath. One bedroom has 2 full sized beds and the other offers a queen.
 This master bedroom has a deck with a great view of the ocean!

On the next level is the master suite with King bed complete with its own deck and views of the Atlantic Ocean. Around the corner is the fourth bedroom with a built in bunk style beds. Take a walk down the open hallway overlooking the living room and with oceans views out the upper level windows, and you will find the fifth bedroom with 2 full size beds.
Awesome views from the top floor decks and just a short walk on flat land to the beach!

It's time for SHRIMP and GRITS!  
A breakfast, lunch or dinner dish!

Plus canned Carnation milk and canned Chicken broth 

If you have ever tried this dish in a restaurant and wanted to prepare it yourself . . . well here are some things I have learned from trial and error and "googling" recipes.  It is really simple and QUICK! 

The above products are the ones that I use.  I know, I know, I cheated on the bacon!  But if you want you can fry some bacon up ahead of time to use.  But you really only want a sprinkle of bacon - too much takes away from the delicate blend of shrimp and creamy grits.

FIRST -  Use a pound of shrimp (for four servings)  two pounds (for eight servings.
Fresh or frozen works fine.  If fresh be sure to de-vein them.  If they are frozen they are usually already de-veined.  Make sure you thaw them well before cooking.  Check the package for thawing instructions.

SECOND - Saute the shrimp in a pad or two of butter or olive oil.  Add your seasonings - cajun works nice, or go simple with salt and pepper.  If you want to add some fine chopped onion that works well.  You can even purchase pre-chopped frozen onion to save time!  Cook the shrimp over medium heat until they turn from gray to orange and white.  Remove them from the heat and cover the frying pan with a lid to keep them hot.

THIRD - Cook those grits!  I cannot even say the word grits without thinking of "Girls Raised In The South" Amen!  Follow the package directions for cooking the FIVE minute quick grits

-I use the 4 cup recipe on the back of the grits package and double it.   WITH ONE EXCEPTION to the directions - DO NOT USE WATER - use canned Carnation milk and canned chicken broth - half and half.  SO - instead of the six cups of water (remember we doubled the called for 3 cups on the package)  USE  3 cups of carnation milk, 3 cups of canned chicken broth.  Bring to a boil in a large sauce pot.  Stir in the grits, reduce the heat to low and keep stirring them until they get thick and creamy but are still easily moved around in the pot - they thicken as they sit and cool.  You do not want them to stiff.  Once they have cooked for five minutes on low heat they are ready.

FOURTH - Dish out the grits onto a dinner plate, spoon over the sauteed shrimp, top with a little shredded cheese and bacon bits or real crumbled bacon.   VOILA!  This is the most filling and wonderful combination of two of North Carolina's favorite foods!  Serve a tossed salad on the side, or some steamed asparagus.  Or read my blog post "You just did what to those collard greens" and really have a treat to match up to the Shrimp and Grits!  Enjoy!
